Apple Hand Pies Recipe

These apple hand pies feature a flaky, laminated crust and a thick, caramelized apple filling that will not leak during baking.

Apple Hand Pies
Why This Recipe Works:
  • Pre-cooking the apple filling stabilizes the starches and prevents the crust from becoming soggy.
  • Laminating the butter within the dough creates distinct, flaky layers through steam expansion.
  • A cornstarch slurry binds the fruit juices, ensuring a clean, leak-free bake.

The secret to perfect apple hand pies is moisture control.

Raw apples release an abundance of water as they bake, which inevitably turns pastry dough soggy and causes blowout seams. Pre-cooking the filling with a starch binder gelatinizes the fruit juices before they ever touch the crust. This technique ensures a crisp bottom shell and a concentrated, jammy interior.

For the pastry, we use a simplified lamination technique similar to what you might find in a classic Tarte Tatin or a traditional Vegan Apple Pie. Rolling and folding the dough creates alternating layers of cold butter.

When the cold butter hits the high heat of the oven, the water trapped within the butter vaporizes instantly into steam. This steam pushes the flour layers apart, creating the flaky pockets characteristic of professional pastry. To maximize this reaction, keep all ingredients below 40°F (4°C) during prep. If the butter melts prematurely, the layers collapse, resulting in a dense, greasy crust.

This portable format offers a cleaner alternative to traditional Apple Dumplings.

Always vent the top crust to allow steam to escape.

Ingredients

  • 2.5 cups (300g) King Arthur all-purpose flour
  • 1 tsp Diamond Crystal kosher salt
  • 1 tbsp granulated sugar
  • 1 cup (226g) unsalted butter, cubed and chilled
  • 1/2 cup (120ml) ice water
  • 3 medium Granny Smith apples, peeled and finely diced
  • 1/4 cup (50g) light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp unsalted butter (for the filling)
  • 1 tsp cornstarch dissolved in 1 tbsp water
  • 1 large egg, beaten (for egg wash)
  • 1 tbsp turbinado sugar (for topping)

Directions

  1. Whisk flour, salt, and sugar in a large bowl. Cut in cold butter using a pastry cutter until pieces are the size of peas. Gradually add ice water, mixing until dough just holds together. Shape into a disc, wrap in plastic, and chill for 1 hour.
  2. Melt 1 tablespoon of butter in a saucepan over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 6 to 8 minutes until apples soften slightly. Stir in the cornstarch slurry and simmer for 1 minute until thickened. Remove from heat and cool completely.
  3. Roll the chilled dough on a lightly floured surface to a 1/8-inch thickness. Cut into eight 4x6-inch rectangles.
  4. Place 2 tablespoons of cooled apple filling onto one half of each rectangle, leaving a 1/2-inch border. Brush the borders lightly with water, fold the dough over the filling, and press edges to seal. Crimp with a fork.
  5. Place hand pies on a parchment-lined baking sheet. Cut two small steam vents in the top of each pie. Freeze the assembled pies for 15 minutes to firm up the butter.
  6. Preheat oven to 400°F (204°C). Brush the tops of the pies with beaten egg wash and sprinkle with turbinado sugar. Bake for 20 to 25 minutes until deep golden brown. Cool on a wire rack before serving.

Notes

Keep all pastry ingredients as cold as possible to ensure maximum flakiness.

  • Use King Arthur All-Purpose Flour for its consistent 11.7% protein content; if using a lower-protein brand like White Lily, reduce the ice water by 1 tablespoon to prevent a sticky dough.
  • The addition of acid (lemon juice) to the filling lowers the pH, which helps preserve the pectin structure of the apples so they retain some texture rather than turning into applesauce.
  • If you skip chilling the assembled pies before baking, the butter will melt too quickly in the oven and leak out. Prevent this by freezing the shaped pies for at least 15 minutes before baking.
  • After 24 hours in the refrigerator, the crust will lose its crispness due to starch retrogradation and moisture migration from the filling.
  • If you do not have a rolling pin, a straight-sided wine bottle works as a backup, but ensure it is chilled first to avoid warming the dough.

Serving Suggestions

Serve these hand pies warm or at room temperature to experience the contrast between the crisp pastry and the spiced filling.

  • A scoop of vanilla bean ice cream (the cold creaminess balances the warm, spiced apples).
  • A drizzle of warm salted caramel sauce (adds a rich, buttery sweetness that complements the tart Granny Smith apples).
  • A sharp cheddar cheese slice melted on top (the savory, salty dairy cuts through the sweet fruit profile).
  • A warm mug of spiced cider (enhances the autumnal spices within the pastry).

Storage and Reheating

Store cooled hand pies in an airtight glass container in the refrigerator for up to 3 days.

To freeze, flash-freeze the unbaked hand pies on a baking sheet until solid, then transfer them to a heavy-duty freezer bag for up to 3 months. Bake directly from frozen, adding 5 to 7 minutes to the total baking time.

Reheat leftover pies in a preheated 350°F (177°C) oven or toaster oven for 8 to 10 minutes. This restores the crispness of the laminated pastry layers.

Never use a microwave.

You can prepare the apple filling up to 3 days in advance and store it in the refrigerator. This saves prep time on assembly day and ensures the filling is thoroughly chilled.

Ingredient Substitutes

You can adapt this recipe using alternative ingredients provided you maintain the correct moisture and fat ratios.

  1. Granny Smith apples: Substitute with Honeycrisp or Braeburn apples at a 1:1 ratio. Reduce the brown sugar by 1 tablespoon since these varieties have a higher natural sugar content than Granny Smiths.
  2. All-purpose flour: Substitute with a 1:1 gluten-free baking flour blend containing xanthan gum. Increase the chilling time by 30 minutes to allow the alternative starches to fully hydrate.
  3. Unsalted butter: Substitute with high-quality vegan block butter at a 1:1 ratio. Ensure the vegan butter remains frozen before grating or cutting, as plant-based fats melt at lower temperatures than dairy fat.
